I'm no expert, but I IV breed quite alot and I can tell you how I do it.
1) Catch a ridiculous amount of whatever you're breeding for. If the pokemon's rare, you might want to spend more time breeding (meaning having a dad with good IV's but the mom with whatever IV's you got stuck with, and swapping out the mom as better females hatch.) Most of the time though, I'd rather catch than breed. Try to get an inbetween level, high enough that you can get a good idea with an iv calculator, but low enough that they're not hard to catch.
2) Take one of the egg groups the mom's in, and figure out a common, easy to catch pokemon in that egg group. Fill BOXES with it. Now go through, check all their IV's, and pick a suitable daddy!
3)Get a slugma or something with an ability that halves the time it takes eggs to hatch. You're gonna need it.
4) You also want the mom to have the nature you want the baby to be, which is one of the most annoying parts IMO. Some tips are using dittos with the right nature, or getting any pokemon with the ability synchronize as the right nature, and going out with that pokemon as the first pokemon in your party, and hunting for either ditto or the mom pokemon. 50% of the pokemon you catch will have the right nature. Once you've got a correct-natured mom or ditto, attach an everstone.
5) Go for like 2-3 Very good IV's (Like attack and or special attack and speed for sweepers, for walls HP + Defense + Special defense, ect.) and try to get some decent IV's (like, mid ranged) in other stats, except for ones that don't matter. Say, Attack on an Alakazam, or Speed on a Mamoswine. Doesn't matter, be happy with whatever you get.
6) Match up parents so that at least one parent has a 31 in the 2-3 stats you're going for. Remember Def. and HP will be harder to pass on, and a pokemon will only get like 3 IV's from their parents.
7)Now we need to know about characteristics. If you have some parents with 31's in certian stats, it's easiest to see if these 31's are passed on by glancing at a just hatched baby's characteristic.
Often Dozes off-"Highest" IV is HP. Could be 31. All other stats can have an IV = or less than HP IV.
Likes to thrash about- "Highest" IV is attack. Could be 31. All other stats besides HP can have an IV = or less than attack. HP IV must be less than attack (it goes in order from highest to lowest)
Capable of taking hits- "Highest" IV is defense. Could be 31. SA, SD, and Speed can be equal to or less than, Attack and HP must be less than.
Mischevious- "Highest" IV is Special Attack. Could be 31. SD and Speed can be equal to or less than, but HP, Attack, and Defense must be less than.
Somewhat Vain- "Highest" IV is Special Defense. Could be 31. All but speed are less than, but speed could be equal to.
Alert to Sounds- Highest IV is speed. Could be 31. All other IV's are less than.

Often Dozes off has the most potential, because ANY IV could be 31. Once you go down the list though, the IV's above the "Highest" IV can no longer be 31, they could still be 30 though...but you'll be popping out eggs like crazy.

Once you hatch eggs, if they have one of these characteristics, level them up ONLY IN THE DAYCARE or with rarecandies so that they don't gain EV's. I like using metalkid's iv calculator, because you can put the stats in for multiple levels, and find out what the iv's are likely to be at an earlier level than other iv calculators.
8) The majority of what you'll be doing. Hatch. Check Characteristics. Level. Calculate. Swap out parents as you get better pokemon. IV breeding is a horrible world sometimes. Make sure you swap held items such as everstones or lightballs too, and make sure mom has the right nature.
9) Once you get a baby with the prefered iv's, nature, and ability, viola! 500 eggs later, you have that perfect pokemon. And you'll hold onto it like a friggin' diamond lol
